There are days where I simply cannot be bothered with cooking and there are other days when I am strapped for time and just want to make something in a flash. Although packet pasta and noodles tick the box, sometimes I do find them to be a tad boring and I crave a culinary change. My latest obsession is Pitta Bread Pizza. Now this “recipe” isn’t really a recipe as it is super quick, easy and simple, even the most terrible chef in the world could knock up a pitta pizza, it is that easy. Basically I get a standard oval shaped pitta (or pita) bread (I opt for wholemeal but white would do the trick too if you’d prefer) I then cover it in my sauce of choice. So far I’ve tried homemade tomato sauce, simple tomato puree and BBQ sauce. Now I’m not normally a BBQ fan but lately this has been my favourite. Tomato puree is my least favourite as I find it a bit too tangy and boring whereas my homemade tomato sauce is another favourite of mine. Now for toppings I basically use whatever I have in. I’ve tried peppers, sweetcorn, onion, chili, chorizo, pineapple and lots and lots of other toppings but my favourite combination is pepperoni, wafer ham and chicken, jalapenos and fresh mozzarella. I find everything just works so so well together and it really fills you up too. I think next time I’m going to try some spinach, sun dried tomatoes and maybe even a little pesto to see how that works (I can imagine it is super tasty) For “cooking” the actually pizzas, I simply pop them in the oven at 200c for around 10-15 minutes until the cheese is nice and melted and everything is warmed right through. I then plate up and tuck in. It is that easy.
