Add bacon to frying pan along with 1 tea spoon of olive oil. Once the bacon begins to brown, add in your chopped leek along with your chopped clove of garlic and a pinch of salt and a pinch of pepper to season. Fry until you are satisfied. I like to cook mine until the leeks are softened and the bacon is crispy. Once done spoon the mixture into an oven proof flan dish.
Next you want to mix 3 large eggs, 150g of cottage cheese and 20g of chopped chives together. Once thoroughly mixed simply pour over your leek and bacon in the flan dish. You can then pop the dish into the oven for 20 minutes on 190°C/170°C Fan/Gas 5.
Once cooked, leave to set before attempting to eat as the dish will be very hot and will almost definitely burn your mouth! Once it is cool enough to eat you can dig in by serving the quiche either on its own, with a tasty salad or with some lovely salad potatoes.
