When it comes to food I am very much a savoury person. I love a good bowl of Shin Ramyun and if I am totally honest I’m an absolute crisp fiend. It’s rare that I really crave something sweet but it does happen from time to time. One of my favourite sweet treats most definitely has to be my super duper simple peanut butter cookies. They are literally one of the easiest things to rustle up and require just 3 ingredients. Yep, you read that right. They’re mega tasty. If you’re a peanut butter fan, you need to give these a bash. They’re sweet, soft and very moreish. Of course, they aren’t good for you but everything in moderation, eh?
The easiest peanut butter cookies recipe
Wondering what you’ll need for these delicious sweet treats? 200g peanut butter – Smooth or crunchy. I personally opt for smooth but either will work. You’ll also need 1 large egg as well as 120g caster sugar. Brown sugar is also delicious. That’s it. Told you they were simple!
To make the cookies y0u simple pop everything into a bowl and give it a good mix. You want to make sure everything is mixed well and the mixture has a kinda cookie dough texture. Next, you wanna pop your mixture onto a tray ready for the oven. My advice? Pop some baking paper down because these cookies do have a tendency to stick. Once you’ve covered your tray place small grape size amounts of mixture down but make sure you leave a decent amount of space between each dollop. During cooking, the cookies will spread and expand. The last thing you want is your cookies forming one mega cookie blob. From my experience I find I get around 12-15 cookies out of the mix depending on how generous I am with my dollops.
Once your dollops of dough are down you wanna give them a bit of a squashing. You can use a fork to do this or your good old hands, whatever takes your fancy. Next up you want to pop them in the oven to actually cook. Whack them on 180C/160C fan/gas 4 for around 15 minutes. Just keep an eye on them to make sure you don’t burn them. The key like with most baking recipes is to have that lovely golden colour, it’s really that simple.
Don’t be tempted, let your cookies cool!
Once you’re happy and you’ve removed your cookies from the oven you want to let them cool on the tray for a couple of minutes before even attempting to move them onto a wire rack to cool properly. This is because the cookies will be super soft and will just break straight away if you handle them so soon. Once they’ve firmed up a little place them on a wire cooling rack and give them around 10 minutes to cool so you don’t burn your mouth off. Once they’re cool enough to handle, feel free to go to town on your biccies. Oh and be sure to share them with your loved ones.
Although these cookies are tasty as they are they also work nicely with other things thrown in too. I’m talking about the likes of chocolate chips and smarties, they both work really good. Those are however just optional and you don’t need them really because the cookies are amazing just as they are. Oh, and did I mention they’re gluten free too? Win!
