  1. Peel 3 large white potatoes and chop into medium sized chunks.
  2. Boil your potatoes until they are cooked then drain the potatoes in a colander and be sure to fluff them up a little before setting aside for later.
  3. Chop up your Large White Onion into thin strips and add to a large frying pan with 1 tbsp of Olive Oil. Cook until soft and golden. This is essential as it gives the dish a lovely sweetness.
  4. Use a Garlic crusher to crush your Garlic before adding it to the frying pan with Cumin Seeds, Garam Masala, Salt, Ground Coriander Powder and Turmeric Powder. You can also add Chili Powder if you wish to give your potatoes a spicy kick but it is entirely optional.
  5. Once all the flavours begin to produce a wonderful aroma, add in your Spinach. At first you might think that there is too much but be assured, the Spinach will dramatically reduce in size to a fraction of its original size.
  6. Once the Spinach has reduced, simply add in your Potatoes and ensure that everything is coated in the delicious flavouring. You can also leave the potatoes to cook a little longer, especially if you want them to be a bit crispy. Once done, simply serve up either as a main dish or a tasty side dish to accompany a flavourful curry. And voila, you've made Curried Potatoes!
